PALEO LEMON CHIA BREAD

In addition to making exercise a priority again and increasing my water intake, I've been considerably limiting dairy, sugar, and gluten this month. It's made such a difference in how I feel, but it's still a struggle. Knowing how to treat myself with a healthier option every now and then makes it that much more doable. I am a firm believer in the notion that finding wellness is not about depriving ourselves. It's about having the knowledge to make good choices and the awareness that certain foods can keep us from feeling our best. 
This lemon bread is a fantastic treat for when you are craving a yummy baked good! Instead of regular flour, it's made with coconut flour which is packed with protein, fiber, vitamins, and healthy fat. The chia seeds also add an extra dose of protein and fiber! The sweetness comes from raw honey, and the lemon flavor is brightened by the addition of some lemon essential oil. Enjoy! 

Paleo Lemon Chia Bread
2/3 c. coconut flour
1 tsp. baking soda
1/4 tsp. salt
1 Tbsp. chia seeds
zest from 3 lemons
juice from 3 lemons + 6 drops lemon essential oil (optional) + enough almond milk to equal one cup
6 eggs
1/4 c. coconut oil, melted
1/3 c. raw honey

Preheat oven to 350 degrees F. In a medium bowl, add flour, baking soda, salt, and chia seeds. Whisk to combine. In another bowl, mix eggs, lemon zest, coconut oil, honey, and lemon/milk mixture. Slowly pour wet ingredients in to dry, and mix until just combined. Pour into a heavily greased pan and bake for 35-40 minutes. Remove from oven and let cool.
