Before we moved to London I was a huge fan of this creamer in my morning cup of coffee. Much to my dismay, you can't find that particular brand (or anything similar) here in the UK. At least I haven't been able to. With no other alternative, I have just been using the whole milk that we buy for Josephine. And, while this makes for a very yummy and creamy cup, I've been having some not-so-fun side effects from reintroducing dairy back into my diet. My eczema has returned, my skin has been breaking out more frequently, and I have just been feeling unwell. Since mama just can't go without her caffeine in the mornings (kudos to those of you that do!!), I decided to try my hand at recreating a coconut milk creamer at home.  It only takes a couple of ingredients and a couple of minutes. And it tastes just like the store bought version!

Coconut Milk Creamer
(makes about 4 cups)

-one can organic coconut milk
-1-2 cups unsweetened coconut milk (depending on how creamy you want it)
-agave syrup, to taste (optional)
-vanilla extract, to taste (optional)

Combine all ingredients in a saucepan over medium low heat. Heat until tiny bubbles begin to form, but not to boiling. Remove from heat and allow to cool. Transfer to a lidded container (a mason jar works well) and refrigerate.

Just a note: I made a batch with the agave (about a teaspoon) and the vanilla extract (about a tablespoon) and it is delicious. Next time I may just omit both since I tend to like my creamers on the less sweet side. You could always replace the vanilla extract with another of your choice. Almond or coconut would be pretty yummy!

  1. I suffer from eczema too...so omitting dairy has really helped? Maybe I should try that, although I love dairy!
