FOOD LOVE/VOL. 2

We kind of fell off the clean eating bandwagon for a bit over here. Between Josephine's first birthday and the cooler temps all we have wanted to eat are warm, comfort foods and sweet things. The pork carnitas were my first foray in to the world of slow cookers and cooking pork. I can't tell you how easy and delicious this meal was. The recipe requires very few ingredients, but it was so flavorful! It got a big thumbs up from Pete, and it made leftovers for days! I made the butternut squash mac and cheese for Josephine's party and it was a huge hit. I had to take everyone's word for it, because I never actually got a chance to taste it. That's how quick it went! I'm going to have to find a reason to make this again just so I can give it a try. I've made these pumpkin oat pancakes twice this week. Josephine loves them! Something about whipping up pancakes from scratch makes me feel like an uber homemaker and totally on top of my game. Until I look at the dishes piled high in the sink, that it is... then it's right back to reality! These pancakes are gluten and refined-sugar free and go wonderfully with a bit of pure maple syrup drizzled on top. I will be making these again this weekend for sure!

    1. my husband just informed me that he actually didn't get to try the mac and cheese either, it got eaten up so fast..ha! so i will definitely be making it again soon. everyone at the party raved about it :)
