We have had a lot of time on our hands this week. Between Pete being home and the non-stop rain, there's been lots and lots of cooking and baking around here. We are getting our feet wet with the whole paleo/Whole30 thing. I'd say we're about 90 percent paleo right now. Every now and then we have a little treat. Like these oatmeal raisin cookies! This is, hands down, the best recipe I have found. They are chewy and thick. Perfect with a cup of tea on a rainy day. Just take my word for it. The carrot soup was a hit with everyone...Josephine included! It's creamy and coconut-y, with a hint of ginger and curry. Yum. It would be perfect with a thick, crusty piece of bread. And, we made this entire meal. So worth the time. The chicken was so moist and flavorful. And the coconut milk ranch dressing! You guys, it was delicious. I have been eating it on salads all week long!
