Over the last couple of weeks I have been spending a lot of time in the kitchen cooking and baking up a storm so we have a stocked freezer when baby Mucha makes her debut. The last thing I want to have to worry about is cooking once this little lady is here. I figure this will guarantee that we have some healthy meals to eat for the first week or so, and hopefully prevent us from ordering out every night. Pete thinks all of this cooking is my form of nesting, and it may well be. I always thought I would be the type to want to clean every nook and cranny, organize all of the shelves and clean out closets. In actuality, I have had zero desire to do any kind of cleaning. Thankfully, I have a husband who has been great about picking up my cleaning slack lately.

Hopefully it won't be too much longer before we will be breaking out some of those freezer meals. Our due date is 9 days away! We have a doctors appointment on Monday where I am hoping to hear that there has been more progress since our last appointment. With hurricane Sandy set to hit the DC area early next week, we aren't looking for her to make her arrival too soon. Although that would make quite the story.

For those who are interested, here is a list of the meals and baked goods currently in our freezer:
Turkey Chili
Macaroni and Cheese
Spinach Lasagna Rolls
Chicken Empanadas
Beef Empanadas
Spinach and Green Onion Quiche
Corn Muffins
Pumpkin Bread
Blueberry Bran Muffins
Apple Bran Muffins

If you would like any of the recipes, just let me know!

  1. Wow...I wanted to do this but had no motivation. You definitely don't want to have to worry about cooking for the first few weeks! I hope your little one holds off for Sandy!
